Last time I wrote my blog I told you about corned beef hash. Well, this is the dish I made to go with it.
It is braised red cabbage with apples and onions.
You get a casserole that you can put on the hob as well as in the oven.
You cut half a red cabbage (.i.e about 2lb or 900g) into shreds and put half of this into the casserole with some salt and ground black pepper. then you put in a layer of chopped cooking apples. You need about 1lb , so at this stage you put half of them in the pot. Chop about 1lb of onions quite small and put half of them in. Chop a clove of garlic really small and sprinkle half of this over together with a pinch of nutmeg, a pinch of cinnamon and 1.5 tablespoons dark brown sugar and then repeat these layers including the spices and garlic. Pour in 3 tablespoons of white wine vinegar and dot with butter. (about 1/2 oz or 10g.
Put the lid on the casserole and cook slowly for about 2-2.5 hours. You could use a saucepan with a thick base if you don't have a cassserole. Stir it a couple of times.
You can freeze some of it if you want.
It is lovely with the corned beef hash. You could invite close friends round to share the whole thing. A nice cheap meal because corned beef hash is cheap and red cabbage is in season.
