Blackberry and Apple Pie

We have been blackberrying quite a lot in the last few days. In previous years it has taken hours to pick enough blackberries for 3 pies but this year we found it only too a few minutes. We went to a cycle track which runs past the back of our gym. We are early birds at the gym and we are there, on the doorstep at 6.30a.m. When we have finished out we go and start blackberrying. The rain must have made the blackberries so huge! No one else was about. No one else had picked any at all. So they were all ours.
We put them with the windfall apples from the garden and at the weekend I showed my husband how to make pastry. We used an oven thermometer to get the oven temperature just right and the pies were gorgeous. We ate one and froze three!
