Half a Pork Pie my Only Lapse

I am still trying to cook and eat healthy meals.Last week my only lapse was half a pork pie so I am not doing too badly. I blame the pork pie on Peter because he does insist on popping out and coming home with little treats  and it was soooooooo tempting. !! Here is the meal plan for the week.I planned it and stuck to the plan.

Monday.Mashed potato, salmon, pesto, tomatoes, cabbage, broccoli, spinach. (I made lots of mashed potato for cheese and potato cakes.
Dessert : Baked apple stuffed with raisins: .

 Tuesday: Cheese and potato cakes. (I just beat two eggs into lots of mashed potato, add plenty of pepper and grated hard cheese. I used extra strong Cheddar because I do not need so much of it. I formed the cakes into balls and then rolled them in breadcrumbs which I had kept in the freezer and then toasted. I also grated plenty of cheese and used some in the cauliflower cheese. I made enough cheese and potato cakes for two days.)

Dessert: Home made yogurt with honey and a variety of seeds and chopped nuts.
Wednesday: Cheese and potato cakes.  frozen peas, tomatoes.
Trifle without cream and with bananas in it.
Thursday: Stuffed peppers, rest of the cauliflower cheese.

Dessert: the rest of the trifle.
Thursday: Bulgar Wheat salad. Stuffed peppers.

Dessert: Bananas and custard
Friday: Fresh tuna, bulgar wheat salad. Tomatoes
Dessert: Pancakes and lemon
Saturday:Vegetable and lentil soup with home made bread.

Dessert: Pancakes and lemon.
Sunday: Spaghetti with vegetarian tomato sauce.
Dessert: Apple crumble made with wholemeal flour. Custard.

Love the idea of the cheese and potato cakes - anything involving mash and cheese gets a big thumbs up from me :-))
