Beef with Spinach Recipe

My husband has been cooking the meals this week as we are role reversing. I am to learn how to do the accounting for our business and he is doing the cooking, shopping and catering for a week.

 This is a meal he did for us. It is a beef and spinach bake.

You need
750 g spinach
1 tablespoon of oil
a large onion finely chopped
500g mince beef (we use minced steak)
125g mushrooms sliced
150 ml fresh cream with a teaspoon of lemon juice stirred in
half a teaspoon each of dried origano, dried basil, dried thyme
125g grated Cheddar
125g grated Paesan
salt and pepper
Wash the spinach and with just the water clinging to the leaves cook it slowly until tender and then drain in a sieve pushing the water through the sieve with the back of a spoon. Chop it.
Heat oil in a pan, add onion and fry till softened. Add beef and fry till well browned
Stir in the mushrooms and fry for 5 more minutes.
Drain off the fat. Add the chopped spinach, cream, herbs, half the cheese. mix well. Add salt and pepper and put into a casserole.
Sprinkle the rest of the cheeses on the top and back at 180C or gas mark 4 for 25 mins.
